How to Use This Converter

Enter the temperature exactly as your recipe prints it, then tap the matching unit chip — Fahrenheit, Celsius, Gas Mark, or Kelvin. All four unit cards recalculate at once. The Convection Difference

Water boils at a lower temperature — near 202°F at 5,000 feet instead of 212 — so moisture escapes faster and leavening gases expand more, causing cakes to rise too fast and then collapse. The common fixes are to raise the oven 15 to 25°F to set the structure sooner, shorten the bake by 5 to 8 minutes, add a tablespoon of flour per cup at 5,000 ft and above, reduce sugar slightly, and increase liquid. Safe Internal Temperatures by Food Type

Oven temperature gets food cooking, but internal temperature is what makes it safe. The USDA Food Safety and Inspection Service sets minimum internal temperatures: 165°F for all poultry and reheated leftovers, 160°F for ground meats and egg dishes, and 145°F with a three-minute rest for whole cuts of pork, beef, veal, lamb, and fish. Steak lovers chasing a medium-rare 130–135°F center should understand that is a personal-preference target below the USDA safety line, appropriate only for intact (not mechanically tenderized) cuts. The everyday anchors are Gas Mark 4 = 350°F = 180°C (standard baking), Gas Mark 6 = 400°F for roasting, and Gas Mark 2 = 300°F for slow cooking.
